Granitas

Strawberry Mint Granita

Preparation Time: 3-4 hours

Cooking Time: 10 minutes

Servings: 4

Ingredients

1 cup golden caster sugar

1/2 cup of water

2 cups strawberries, hulled and halved

8 mint leaves, plus extra sprigs to serve

Instructions

1. Place a skillet over low heat. Add sugar and water to the skillet, stir until the sugar dissolves, do not let it boil.

2. Add strawberries to a blender and pulse until it becomes a smooth puree. Pour into the skillet.

3. Add mint leaves and increase the heat to medium heat. Let it simmer for 5 minutes until the mixture thickens. Sieve the mixture and place it in a bowl, allow it to cool for 15 minutes.

4. Transfer the ice cream mixture to a container and freeze for 40 minutes. After 40 minutes, remove it from the freezer and stir very well with a fork or a spatula.

5. Freeze for another 40 minutes. Repeat the process 3-4 more times or until ice cream is frozen.

6. Serve in tall glasses. Place a sprig of mint on top.
